Episode 89 of the JTBC variety program "Please Take Care of My Refrigerator" unveiled the dish prepared by Kwon Seong-jun. The chef created a filled preparation by grinding together the innards of bungeo shrimp and shellfish.
Kwon explained the composition of the plate in detail. It combined squash blossom, bungeo shrimp, jelly made from shellfish broth and Shine Muscat grapes. The filling used ground bungeo shrimp innards and shellfish, while the shellfish-broth jelly was placed on top to bring the different flavors into harmony.
The cast members offered specific observations after tasting the food. Chef Yoon Nam-no highlighted the savory richness of the shrimp innards, the soft texture of the squash blossom and the sweetness provided by the Shine Muscat grapes. Each component contributed a distinct element to the overall tasting experience he described.
Yoon emphasized how the sour, sweet, salty and umami notes came together, saying, "The sourness, sweetness, intense saltiness and umami are just pounding my sujebi." His unusual expression conveyed the force with which the combined flavors struck him.
He also pointed to the crisp texture of the fried red-shrimp head, another detail that demonstrated the dish's degree of completion. Still visibly absorbed in the tasting experience, Yoon summed up his response by calling it "a taste that won't let me calm down."
Following Kwon Seong-jun's dish, the contest continued with a closely matched showdown between chefs Jeong Ho-young and Choi Hyeon-seong. Choi presented vongole pasta and used a large amount of garlic to build its flavor.
The cast also focused on the pasta's texture. One reaction described it by saying, "That sujebi-like texture keeps lingering against the teeth, all plump and springy." The comment underscored how strongly the dish's chewiness remained after each bite.
