A specialized sundae-guk restaurant that has occupied its spot in Daejeon Yuseong Market for over 60 years is capturing the public's palate. According to a TV CHOSUN 'Home-Style Meal Travels' video, this place has established itself as a local specialty with its clean, grease-free broth and unique style of sundae.

The secret of tofu sundae mixed by hand instead of machines

The biggest characteristic of this place is that they use handmade 'daechang sundae' instead of the typical glass noodle sundae. Following the tradition of the Daejeon region, this sundae is characterized by putting tofu inside the stuffing instead of glass noodles. The cast in the video shared the taste, saying, "Other places have a lot of vegetables and glass noodles, but in Daejejeon, there is tofu inside the sundae," and "Thanks to the tofu, the texture is soft and savory."

In particular, the owner's extraordinary persistence is contained in the sundae manufacturing process. For the reason that using a machine could mash the vegetables and change the texture, the owner still mixes the sundae by hand. In the video, the owner explained the reason for not shunning the difficult manual labor to maintain the taste customers love, stating, "If we use a machine, the vegetables all fall apart and become like dough."

The broth, made by simmering beef bones and assorted bones for half a day, produces a white and savory taste without grease. Regarding the broth manufacturing method, the owner explained, "We boil it from yesterday afternoon and it takes one day," showing an attitude of never making even common food carelessly.

The life of the owner, who has guarded the market alley for over 60 years, is also captured in the video. Having settled in Daejeon in her early 20s following her husband, the owner has made a living helping with the sundae business in the market. Currently, she feels pride as a mother who has raised her children to success, and she still runs the shop by personally taking care of everything from bone preparation to sundae manufacturing.
