“Switching to English mode” Chef Edward Lee's English instructions and unexpected mishaps

Upon discovering that the guest chef is Edward Lee, Jay expressed his nervousness, noting that he has always respected the chef. As Lee explained the cooking process in English, Jay admitted to feeling flustered, saying, "Since we are conversing in English, it takes a bit of time to switch my brain into English mode." He explained that because English is not his mother tongue, he missed several important words during the initial stages.

Unexpected mistakes also occurred during the process. When Lee instructed him to put eggs in the water, Jay confessed, "Because he said to put the eggs in, I naturally thought I had to crack them and put them in." Lee corrected the situation, guiding him to add the eggs whole with the shells intact. As the tension mounted, Jay shared his mindset: "If it goes well, it goes well, but if not, I should just stop."

Challenging unique recipes using bacon, gochujang, and maple syrup

The menu Jay selected featured eggs and bacon as the primary ingredients. Following Lee's instructions, Jay fried the bacon until crispy and prepared thinly sliced onions. For the sauce, he utilized brown sugar, maple syrup, salt, and garlic. Lee instructed him to ensure the bacon was crispy without burning, and Jay noted that the slight caramelization made the bacon sweet yet not salty.

The incorporation of Korean ingredients was a highlight. Jay added gochujang to the bacon, and for the final sauce, he mixed half a cup of mayonnaise, one spoonful of mustard, and one spoonful of gochujang to create an orange-colored mixture. Regarding the process, Jay remarked, "I love eating, but I'm not particularly good at cooking, so I will do my best."

“I want to make a Seattle menu” Jay reveals his passion for cooking

During the session, Jay revealed that his interest in cooking stems from his hobby of "recording how I ate when I visit restaurants." When asked about his future, he shared his ambition: "My dream is to open a restaurant in the future. I want to create menus related to my hometown, Seattle, such as clam chowder or seafood dishes."

Lee provided a professional tip, noting that Jay's method of straining egg yolks through a sieve to create a powder was "the secret to creating a good texture." Reflecting on the fast-paced and hectic experience, Jay concluded, "It was as difficult as it was happy."
