Singer Sung Si-kyung has presented a recipe for "Green Onion Chicken Pancakes" (Padak-jeon) that captures the flavor of Samgyetang by utilizing leftover broth.

The video, released through the YouTube channel "Sung Si-kyung SUNG SI KYUNG," features the cooking process for the "Green Onion Chicken Pancakes," a dish he noted may be past its trend but guarantees good taste. During the cooking process, Sung Si-kyung began by using a knife instead of scissors to prepare the ingredients into sizes that are easy to eat. For seasoning, he chose to use salt, pepper, and one spoonful of cooking wine to add sweetness.

Batter composition completed with curry powder and beer

The core of this recipe lies in the composition of the batter that wraps the combination of chicken, green onions, and Cheongyang chili peppers. Sung Si-kyung mixed one spoonful each of starch and frying powder to add crispiness, while adding a small amount of curry powder to provide a variation in flavor. He mixed only a small amount of curry powder, considering that adding too much could result in a "baby taste." He mentioned that it is better to add plenty of green onions, so he included a generous amount along with Cheongyang chili peppers.

A particularly notable point is the method used to adjust the consistency of the batter. Instead of using regular water, he used a small amount of leftover beer to adjust the batter's thickness. He also added a caution that because the dish contains chicken, it must be cooked over high heat without rushing to prevent burning. Sung Si-kyung completed the batter by controlling the amount so that the coating would not become too thick.

A 'health food' taste capturing the flavor of Samgyetang

Upon tasting the completed Green Onion Chicken Pancakes, Sung Si-kyung evaluated the dish by saying, "It feels like eating Samgyetang in the form of a pancake," noting that it tastes like a health food. He reacted that the unique savory flavor of the chicken is well-preserved. He cited the spiciness of the Cheongyang chili peppers, the aroma of the curry powder, and the texture of the batter—made by mixing starch and frying powder—as the elements that determine the taste.

Sung Si-kyung explained that using beer to adjust the consistency and the combination of ingredients ultimately completed the flavor. He expressed high satisfaction with the finished dish, emphasizing the appeal of the recipe.
